Amazing Grains of Ronan, Montana brings a deliciously Native American twist to the gluten-free lifestyle with its Montina™ brand All-Purpose Gluten-Free Baking Flour Blend and Pure Baking Supplement. Through years of extensive research and development, the grower collective of Amazing Grains in connection with scientists at Montana State University has brought an old Native American staple known as Indian ricegrass to the forefront of modern gluten-free baking and product development. As the headlining ingredient in all Montina™ products, Indian ricegrass is high in protein, fiber and flavor. Combined with a signature ratio of white rice flour and tapioca flour in the All-Purpose Baking Flour Blend, Indian ricegrass adds a distinctive and memorable signature flavor, aroma and texture to gluten-free baked goods.
Open a package of Montina™ All-Purpose Baking Flour Blend or Pure Baking Supplement and you will discover the fresh and inviting smell of milled Indian ricegrass. The sage color of the grass imparts a hearty and robust appearance and its slightly woodsy scent almost similar to bran packs a powerful punch of flavor and aroma for the artisan gluten-free baking experience. Enjoy Montina™ Bread, a signature recipe that relies on classic bread-baking basics made simple with a hand mixer. Whether eaten when piping fresh and moist right from the oven or when toasted by the slice, Montina™ Bread is unlike any other gluten-free bread you will eat. Many of the bread’s characteristics are uncanny in resemblance to a yeast bread made with wheat flour. Montina™ Bread does not fall apart or crumble in your hands as its texture has a delightful “spongy” quality quite similar to that of a wheat-based loaf of bread.
In addition to making the signature Montina™ Bread, use the Montina™
All-Purpose Baking Flour Blend to concoct a wide array of baked goods from scratch and use the blend as a flour substitute for your favorite wheat-based recipes cup for cup. The Montina™ Pure Baking Supplement can be used to add additional protein and fiber to your recipes with top baking performance by substituting 15-20% Montina™ for one of the gluten-free flours you are currently using in your recipe.
When following a gluten-free diet that is healthy and nutritionally balanced, adding protein and fiber to dishes and baked goods should be a general focus. Montina™ All-Purpose Baking Flour Blend simplifies this challenge by providing 7 grams of protein, 5 grams of dietary fiber, and 5 grams of insoluble fiber per one 2/3 cup. The Montina™ Pure Baking Supplement (100% Indian ricegrass) provides 17 grams of protein, 24 grams of dietary fiber and 24 grams of insoluble fiber. In addition to your baking recipes, use the Blend or Supplement for your culinary adventures that include gravies, stews, soups and more.
Doctor David Sands of Montana State University at Bozeman, Montana is the fountainhead behind the Montina™ project. With a vision and mission to boost the financial security of farmers in Montana and the region who have been long faced with challenging economic times in the agricultural industry, Dr. Sands embarked upon a search for an alternative crop to wheat and barley that could be grown and improve the industry of farmers in the Northwest. During his search for the optimum alternative crop in the mid 1990s, Dr. Sands discovered the Native American Indian ricegrass plant. This wild grass presented many worthwhile features to consider that include its resistance to drought, ability to grow in soil that is unfavorable for growing other crops, a high level of protein and fiber, and even more significant its inherently gluten-free status.
After discovering the wild grass, years of research, development, and testing ensued. In 2000, the beginning stage of developing the Amazing Grains Grower Cooperative to plant and harvest the Indian ricegrass began and the entity became official in 2001. In May 2003, Amazing Grains and its registered trademarked brand Montina™ was ready for its first product launch. Since the Montina™ product hit the shelves across the country, the company has been propelled by increasing consumer demand and looks forward to expanding its product line and researching other alternative gluten-free crops for production in the future.
Not related to rice, Indian ricegrass has the acronym IRG and is known in scientific terms as Achnatherum hymenoides.
Indian ricegrass has a hard seed coat and is planted in the fall. It usually takes one year to grow a large enough grass crop to yield a worthwhile harvest.
The Amazing Grains Grower Cooperative consists of 56 members from 6 states.
Amazing Grains owns approximately 3,000 acres that are planted with Indian ricegrass and are producing significant yields. The majority of the acres are on dry land with some planted on irrigated ground.
